For almost a year now, I have been eating mostly gluten free (GF). I won’t bore you with the details, but making this change has helped me to eliminate a lot of bothersome health issues I was experiencing.
One essential part to being GF is finding a flour blend that you like and that works well in daily cooking and baking. There are countless brands and varieties available. I tried several, (and spent a lot of money in the process) but was unable to find a GF flour that I liked. Most had a poor texture and produced dry baked goods. Frustrated, I ended up contacting Nadia Cakes in Maple Grove to ask what brand or type of flour they used. Nadia Cakes makes the best GF cupcakes and desserts that I have ever had. The friendly staff pointed me towards a company called Beyond the Grain Gluten Free.
I went onto the website for Beyond the Grain and sent them an email. One of the owners of the company, Sheila, replied and we have been emailing back and forth ever since. Sheila is extremely friendly and helpful. She has been generous enough to share some of her delicious recipes with me.

Now for the BEST GF Pancakes…
I love this recipe so much that I keep a couple of containers of the dry ingredients pre-measured in the pantry.
It is as simple as measuring out all of the ingredients…
And adding some blueberries if you so choose.
Melt a little butter and brush onto the pan between pancakes. This keeps the pancakes from sticking and helps them turn golden brown.
Wait until you see the little bubbles.
Keep on stacking…
Add your favorite syrup or topping and enjoy!
GF Pancakes (using Beyond the Grain flour blend)
- 3/4 cup of Beyond the Grain’s flour blend
- 1/4 cup of almond flour (optional….can use all BTG…so 1 cup of BTG if you are allergic to nuts)
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 2 eggs
- 2 Tbsp of oil
- 1 cup of buttermilk (1 cup skim or almond milk with a big splash of white vinegar)
- Mix all dry ingredients together
- Add wet
- Stir until well blended
- Heat a pan to medium-low
- Use a small amount of butter or cooking spray
- Pour on a couple spoonfuls of batter
- Wait until you see little bubbles forming across the pancake
- Flip and after about 30 seconds, remove and start the next pancake
