Garlic Parmesan Roasted Zucchini and Yellow Squash

Here is a short and sweet post…no blabbing by me. Just a quick side dish and a way to use up more zucchini and yellow squash.

There is no need to be precise with amounts but I will give you an idea of what I do…

Ingredients

  • 4-6 cups chopped zucchini and/or yellow squash
  • 1/2 cup grated parmesan cheese
  • sea salt and pepper to taste
  • garlic powder (about 1 tsp)
  • cooking spray

Directions

  • Preheat oven to 400 degrees
  • Chop zucchini and squash
  • Coat baking pan with cooking spray
  • Add zucchini and squash
  • Spray the veggies with a bit more cooking spray
  • Add seasonings and toss to coat
  • Top evenly with cheese
  • Bake for 20-30 min. until veggies are tender and cheese starts turning golden brown
  • You can broil for the last few minutes if you want to crisp up the top
