Quinoa Taco Salad

Looking for a way to incorporate more quinoa into your diet? This taco salad is an easy dinner idea that is healthy, quick, and can be customized to your taste. This is not a precise recipe. I will show you how I make this dish, but there is lots of room for variation.

Quinoa Taco Salad

Prepare quinoa according to directions. I started with 1 cup dry quinoa and used my microwave rice cooker. Lime and cilantro provide the seasoning for the quinoa.

Add the lime juice and chopped cilantro directly to the serving dish.

Brown a package of ground turkey breast and add your favorite store bought or homemade taco seasoning blend.

Add 1 can diced green chilies and 1 can low sodium black beans, drained and rinsed, and mix into the meat.

Toss the warm quinoa with the cilantro and lime juice. Add 1/2 to 3/4 pint of halved cherry tomatoes.

Add the meat mixture to the quinoa and tomatoes. Toss gently until combined.

Serve by topping with cheese, Greek yogurt, and avocado slices.
