As I have mentioned before, Tastefully Simple has a line of gluten free products. I have been able to try most of them because a friend of mine is a consultant. One of the products that I have made several times is the Gluten Free Cinnamon Apple Cake.
The cake mix only requires 2 ingredients: eggs and chopped apples. I decided to substitute rhubarb this time, because I have already made the cake with apple.
The process to make the batter is very easy. It is as simple as dumping the cake mix, eggs, and apples (rhubarb in this case) together and stirring it up.
This mix does not come together like a traditional batter. It looks very crumbly and dry…kind of like there is no way it will actually make a good dessert. Be patient. It looks quite different after baking. Press the batter into a greased, 8×8 pan and bake. The cake does take quite a while to bake, up to 55 minutes.
The cake has a very good cinnamon flavor and stays moist. The top hardens into a crust and sort of cracks when you cut into the cake. This part tastes good but makes it difficult to cut a nice piece of cake.
Overall, if you are looking for a quick and easy dessert, this is a good cake. However, it does not make for the best presentation.
