Tomato Cucumber Salad

Tomato Cucumber Salad is a quick, no fuss side dish that is healthy, simple, and utilizes summer produce. It is light and fresh so it goes great with a heavier item such as a grilled steak. There are lots of ways to do this salad and many people have their own version. Sometimes I make my own vinaigrette and sometimes I cheat…there are some really delicious bottled dressings out there that make this even easier to whip up. This is not a recipe with precise amounts. It depends on how many people you need to serve and what you have on hand. You can also vary the ratio of ingredients and amount of dressing based on your preferences.

Recipe

Ingredients

  • Tomatoes – chopped into large pieces
  • Cucumbers – peeled and sliced into half-moon shapes
  • Shallots – diced
  • Vinaigrette – homemade or store-bought (I really like Newman’s Own Oil and Vinegar Dressing)

Cut up all of the produce and add to a serving bowl.
