Cheesy Summer Squash

Cheesy Summer Squash

Cheesy Summer Squash is a slightly decadent way to enjoy this abundant summer vegetable. I buy so many summer squash and zucchini in the summer and always need new ways to cook them. This is a simple, but very tasty way to eat more veggies.

Layer the squash
Sprinkle a small amount of cheese between each layer. Repeat until the squash is gone.
Make the custard mixture and pour over the entire dish.
The dish should be completely covered with the custard. Top with the rest of the cheese.
Bake until golden and bubbly.
Cut into slices and enjoy!
