A quick and easy weeknight meal idea…Salsa Tilapia.
We eat a fair amount of tilapia. The great thing about this fish is that it is mild and can take on all sorts of flavors. Last week I had thawed some frozen fillets and by the time I got home from work, I was not in the mood for the standard lemon, garlic, and sometimes Parmesan variety. In an effort to change up our usual weeknight fish, I turned to some salsa and cheese that I had in the fridge. Here is the creation that followed.
Place the thawed tilapia fillets in a greased baking dish. Preheat the oven to 425 degrees.
Top each fillet with a big scoop of salsa and sprinkle with cheese. I used a corn and black bean salsa.
After about 20 minutes, the fish should be cooked through and the cheese and salsa will be bubbly. Serve along side with refried black beans and brown rice.
