Bacon Cheddar Egg Bake with Mushrooms and Green Onions

This egg bake is so simple and easy that it is kind of a non-recipe…
It uses the same basic formula as my Gluten Free Egg Bake with Spinach, Feta, and Tomato. This is a very versatile dish. You can change up the veggies, meats, or cheeses however you like.
I started with 10 eggs, 1 cup of milk, and lots of yummy fillings…thick cut bacon that I cooked in the oven and chopped, sliced green onions, extra sharp cheddar, and some mushrooms that I browned.
Whisk up the eggs and milk. Season with some salt and pepper to taste.
Grease a pan and layer in all of your fillings.
Pour the egg mixture on top.
Bake at 400 degrees. It will take between 40-45 minutes in a deeper dish like the one I used. If you use a traditional 9×13, it will take a bit less time. You just want the eggs to become fully set.
Time to eat! This can be served for any meal of the day. We had it for dinner!

I’m going to my kitchen this morning and giving this breakfast back a go! Looks so yummy. I will let you know how I liked it. I tried your spinach, tomato and feta cheese dish and it was so simply to throw together, which I loved. This looks like the same concept. Can’t wait to dig in! 🙂
