I am loving my new food processor. So far, making my own hummus has been my favorite part. My black bean hummus is packed full of fresh lime and cilantro, but has a little smokey, spicy kick from chipotle chili powder. It is delicious with corn tortilla chips, crackers, or would be great on a wrap or burrito. Short and sweet today…on to the recipe!
Start by roasting a couple of cloves of garlic in the oven. You will also need a big handful of cilantro and 2 limes.
To the food processor, add 2 cans of drained and rinsed black beans, cilantro, lime juice, cumin, chipotle chili powder, sea salt, oil, and garlic. Start processing on low and move to high as the mixture comes together. Then, stream in a little bit of water to get the texture you like. I added about 1/4 cup.
Get out some pretzels or chips and dig in to this fresh, healthy snack!
- 2 cans low sodium black beans, drained and rinsed
- juice of 2 limes
- 1 cup (about 1 bug handful) fresh cilantro
- 3 cloves roasted garlic
- 1 tsp ground cumin
- 1/2 tsp chiptole chili powder
- 1/2 tsp sea salt
- 1/4 cup canola coconut oil blend
- 1/4 cup water
- Roast garlic by putting a couple of cloves (with skin on) into a small pan in a 400 degree oven. Drizzle with a little bit of oil and a sprinkle of sea salt. Roast until fragrant and soft. About 25 minutes. Remove the roasted garlic from the skin and put into the food processor.
- Drain and rinse black beans and add to the food processor.
- Add cilantro, lime juice, garlic, cumin, chipotle, salt, and oil to the food processor.
- Start processing on low. Once the mixture is coming together, process on high.
- Stream in a little bit of water. I used 1/4 cup, but you can add more or less depending on the consistency you like.
- You may need to scrape the sides of the processor 1 time to incorporate all of the ingredients.
- Garnish with a sprinkle of chipotle or paprika and cilantro.
