Recipe Review: Strawberry Coconut Chia Seed Banana Bread from Ambitious Kitchen

I love banana bread and muffins. It is fun to test out new varieties. Bananas are a staple food in our house, but there always seem to be a few left that get too ripe and end up in the freezer. I am constantly looking for new ways to use them up. I recently stumbled across a recipe from Ambitious Kitchen, and it is a must try! Ambitious Kitchen is a food blog by Monique Volz. I recommend checking out her page…it is loaded with delicious recipes. I haven’t tried one that I didn’t like yet!

The recipe for Strawberry Cococnut Chia Seed Banana Bread was easy to make. I happened to have all of the ingredients on hand. I followed the recipe exactly, with one exception. I swapped the 1 3/4 cups of flour for 1 1/2 cups of gf flour from Beyond the Grain Gluten Free.

The bread is not only beautiful to look at, but it is a delicious flavor combo! The bananas and Greek yogurt keep the bread moist. Coconut and chia seeds add great texture and flavor. I will definitely be making this again!

Using the gluten free flour my bread was done at 55 minutes. Be careful not to overbake this, as gluten free flour is not very forgiving to overbaking.
