Hope you are having a wonderful weekend! The sun has been shining and the weather is absolutely perfect! Our weekend started off reuniting with Oliver. He has been away for 4 weeks completing an obedience and hunting training program. It was hard to be away from him for so long. There have been lots of snuggles this weekend.
The rest of the weekend has been spent doing grad school homework and yard work. I have 4 class sessions left of my program and I will be done!! I am in the midst of the final capstone paper…and here I am blogging instead of writing it. Total procrastinator! Brandon worked on some landscaping projects in our backyard and I finished planting some flowers. I planted my own hanging baskets this year. I just love having lots of beautiful flowers outside!
After all that yard work a sweet treat was in order but I didn’t want to make something too unhealthy. I turned to one of my all time favorite blogs, Ambitious Kitchen, to see if Monique had any healthy desserts that I could make from ingredients I had on hand. I found just the recipe…Gluten Free Flourless Black Bean Brownie Muffins. Like everything on the Ambitious Kitchen blog, these were amazing! At only 159 calories per brownie they satisfy a sweet tooth without overindulging. The recipe has an option to use coffee. I didn’t have any leftover from the morning so I skipped that and they were still delicious!
