Favorite Pin Friday – My Ambitious Kitchen Obsession

You already know that I am a total food nerd. I literally DVR shows on Food Network and The Cooking Channel. I can’t help it. My other nerdy food obsession is to read cooking and food blogs. Until I became interested in writing my own blog I never realized how much I would grow to love and appreciate food blogs. I thought reading them was some sort of weird, hipster-ish thing to do, but clearly I am over that now.

My all time, absolute favorite blog is Ambitious Kitchen. You have seen me post reviews of Monique’s recipes and several have been featured on previous editions of Favorite Pin Friday. What I love about the AK blog is that it is about food, fitness, and healthy living. Monique has tons of gluten free recipes that are easy and healthy. I only wish I was as talented as her at baking up healthy, gluten free desserts. She is also extremely charismatic and fun to follow on social media. In any case, I am not going to go on and on to sound like a creepy stalker…I just admire and am inspired by Monique and her blog.

So…for the 4th edition of Favorite Pin Friday, here are my top Ambitious Kitchen Recipes!

Strawberry Coconut Chia Seed Banana Bread

The name alone speaks for itself. I have done a post on this recipe. It is amazing. I just sub in gf flour.



Flourless Black Bean Brownie Muffins

Again, the name alone…yum! These are so good. It feels like you are eating a decadent treat when in reality these brownies are packed with nutrition.



Healthy Southwest Pasta Salad with Chipotle-Lime Greek Yogurt Dressing

A little spice and all of my favorite ingredients. Perfect for dinner or to bring to a summer gathering.



Oatmeal Cottage Cheese Banana Pancakes

These were featured on a previous edition of Favorite Pin Friday, but I have to mention them in this post. They have become one of our favorite breakfasts or post-workout meals.



Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing

This recipe has also been featured before but this has become a go-to for us. I love making a big batch and bringing it to work for lunches all week.



Now I could go on and on about recipes from AK, but I won’t. There are so many that I love and so many that I still need to try. I would like to stop coming up with my own recipes and just cook my way through Monique’s arsenal. 🙂
