I don’t want to be the one to tell you…but summer is almost done. 🙁 If you have kids in school, or like me are a teacher, that harsh reality already hit a while ago. I am super excited for fall because I have been working on lots of recipes to share with you!
If you are growing tomatoes or frequent the local farmers markets you have probably noticed that they are producing like crazy right now. Pretty soon the cool fall air will put a stop to that…again, so sad. To savor the last bit of those delicious summer tomatoes I want to share a quick idea with you!
This has to be one of my favorite ways to eat fresh tomatoes…just cut them into wedges, crumble on some good feta, season with salt and pepper, then drizzle with some really good olive oil and balsamic reduction. If you are looking for a high quality olive oil or balsamic I would recommend checking out Castillo de Piñar. I use their Extra Virgin Olive Oil for this salad. They also carry an organic EVOO. My favorite part of this salad is the balsamic reduction. Castillo de Piñar carries several varieties. With tomatoes I like using the thyme flavor. It is subtle, but just adds a hint of herb flavor. Their balsamic reductions are organic and non-gmo. They are just slightly thick, a little bit sweet, and make all the difference in a salad.

- Fresh tomatoes
- Castillo de Piñar Extra Virgin Olive Oil
- Castillo de Piñar Thyme Balsamic Reduction
- Crumbled feta
- Sea salt
- fresh cracked pepper
- Cut tomatoes into wedges and arrange on plate.
- Crumble feta cheese and top tomatoes with it.
- Sprinkle sea salt and cracked pepper over the tomatoes and cheese.
- Drizzle EVOO and balsamic reduction over the tomatoes and cheese.
