Guacamole is one of those things that you don’t necessarily need a precise recipe for. I often make it differently every time based on what ingredients I have on hand. My Go-To Guac recipe is a basic guacamole that is perfect for dipping chips, topping, chili, or serving with tacos.

A lot of people like to add garlic to their guac but I think raw garlic is too overpowering. My secret ingredient is a shallot. Shallots have a mild garlicky flavor and you get the little onion kick that guac needs without anything bitter or overpowering.

- 4 ripe avocados
- juice of 2 small limes
- 1 jalapeno, seeded and finely diced
- 1 shallot, finely diced
- ¼ cilantro, chopped
- 1 tsp sea salt
- Mash avocado in a mixing bowl.
- Squeeze in lime juice.
- Seed and finely diced a jalapeno and add to the avocado.
- Finely dice a shallot and chop cilantro. Add to the bowl.
- Season with salt.
- Mix well to combine.
