All I can say is BRRR! I have become such a winter wimp over the last year or so. We have had a pretty mild winter, for Minnesota, and the weather has been beautiful. Now “real” winter has set in with temps hovering around zero and below…I can’t stand it! Luckily in 1 more day I am off to spend a couple of days in Miami to celebrate the wedding of one of my dear friends, Amber. Hello SUNSHINE and warm weather!
Currently I am working on lots of recipes and ideas for you, but while I am off traveling to warmer climates I thought I would leave you with some of my favorite breakfast recipes.
This is my everyday go-to smoothie recipe. While I love breakfast foods, I find myself coming back to smoothies and protein shakes day after day. They are quick, easy, and you can sneak in a big serving of veggies at breakfast!
These waffles are definitely a weekend breakfast. They take a little bit of time, but it is so worth whipping up those eggs white for big, fluffy waffles. You can also make extra and freeze them for a waffle craving during the week.
Oatmeal is almost a separate food group to me. I love that you can have it hot or cold and really for any meal or snack of the day. This bake can be made ahead and eaten for snacks and breakfast all week. You can’t even taste the zucchini but it adds great texture and nutrition to the oatmeal bake.
This french toast bake is definitely more on the decadent side. It’s not an everyday breakfast, but great for a special treat or to make for company. It tastes like a big cinnamon roll!
A serving of these pancakes packs over 11 grams of protein. I love pancakes for breakfast or dinner and these are filling and made with super food quinoa flour and delicious powdered peanut butter.
