Clear up your case of the Mondays with this delicious and healthy breakfast! Today is one of those Mondays that I actually don’t mind…President’s Day…aka bonus day off for this teacher! If you are feeling the Monday blues this is the perfect breakfast to brighten up your day. How was your weekend? Did you do anything special to celebrate Valentine’s Day? Brandon and I usually don’t go to crazy over going out or buying gifts. We usually just make a nice meal together and that is exactly what we did this year too.
I guess my love language is food because all I did was cook for Brandon today…and I loved every minute of it. I recently got a fun little gift pack from Enjoy Life Foods with a heart-shaped pancake mold so naturally I had to make dorky heart-shaped pancakes for breakfast. Our dinner was filet mignon, lemon garlic shrimp, and Caesar salad with homemade croutons. Oh and if that wasn’t enough I got a sweet tooth and made some amazing double chocolate brownies from the blog Running With Spoons. Needless to say Valentine’s Day ended with A LOT of dishes…which I did because I am a nice wife like that.
After all of our Valentine’s Day eating I am ready for something a little cleaner and lighter. I have smoothies and protein shakes for breakfast quite a few times a week. When I have a little more time though it is fun to enjoy them in a smoothie bowl. For a smoothie bowl I just make the consistency a little bit thicker and add some delicious toppings …which is the best part.
For this Blueberry Orange Vanilla Smoothie Bowl I used a new protein powder from Bob’s Red Mill. I am in love with their products so it is no surprise that their new proteins are so good too. The vanilla flavor is gluten free and vegan, has 20 grams of plant-based protein per serving, has 12 grams of fiber, contains omega-3 fatty acids, is free of dairy and soy, and is sweetened naturally with monk fruit. It is made with pea protein, chia seeds, and probiotics.
I always make sure to get some veggies in with my smoothies because you can’t even taste them so there is a big handful of spinach blended with Greek yogurt, orange juice, blueberries, and banana. To top this smoothie bowl I like to use banana slices, chia seeds, and Gluten Free Apple Blueberry Granola from Bob’s Red Mill.

- ½ cup packed baby spinach leaves
- ¼ nonfat plain Greek yogurt
- ½ cup orange juice
- ½ banana
- ½ cup frozen blueberries
- 1 scoop vanilla protein powder
- 3 ice cubes
- ½ banana, sliced
- 1 tsp chia seeds
- 1-2 tbsp granola (I used Bob's Red Mill Apple Bluebrry GF Granola)
- Place spinach, yogurt, orange juice, banana, blueberries, protein powder, and ice cubes into a blender. I use a NutriBullet.
- Blend until everything is combined.
- This smoothie will be thick since it is for a bowl. You can adjust the thickness by adding more juice.
- Pour into a bowl and add toppings.
