Happy Saturday!! How has your week been going? This was my second week off of work for summer. Besides anxiously anticipating Baby Schlangen, I have been keeping busy cleaning, cooking, walking and spending time outside with Oliver, and catching up with friends before life gets crazy. It is supposed to be super hot outside again this weekend. Not fun when you are way pregnant. The heat has a way of helping you to develop gorgeous cankles and swelling…I will miss this so much after I have the baby…HA!
With the hot weekend ahead, a light, refreshing meal that doesn’t require the oven is just the thing. These Greek-Inspired Bowls are perfect for lunch or dinner. To make them, all you have to do is prep a few fresh veggies, shred rotisserie chicken, and cook some sort of rice. I like using a quinoa and rice blend that can be made in the microwave.
To top off the Greek Bowl, Hak’s Greek Salad Dressing is the perfect finishing touch. The Greek dressing is light, bursting with flavor, and a great compliment to the ingredients in my Greek-Inspired Bowl. The Greek dressing is made from red wine vinegar, oil, dijon mustard, sugar, salt, garlic, and pepper. Simple and delicious!

- cooked quinoa or rice blend
- shredded rotisserie chicken
- seeded and finely chopped roma tomatoes
- peeled, seeded, and finely chopped cucumber
- crumbled feta
- chopped kalamata olives
- finely chopped red onion
- Hak's Greek Dressing
- Prep all of your ingredients.
- Add desired amount to each bowl.
- Top with 1 packet of Hak's Greek dressing.
