Sunday evening is here again! How was your weekend? The weather here was beautiful but there is definitely that fall chill in the air. I spent the weekend cleaning the house, working on some new things for the blog, got to spend time with two wonderful friends, and of course hung out with our beautiful little baby girl.
One thing I love about fall is that there is still an abundance of delicious produce. One of the best being apples. Minnesota is known for the Honeycrisp apple which is my absolute favorite. Apples and other fruits are great on their own but even better when dipped into peanut butter. By know I am sure you have heard of PB2 or another brand of powdered peanut butter. Sometimes it is referred to as peanut flour. I love regular peanut butter and eat it often…ok daily, but powdered peanut butter is great for baking and incorporating into other recipes. PB2 contains less fat than regular peanut butter but still is loaded with the healthy proteins. Recently PB2 came out with a new product. PB2 with fruit. There are three varieties…PB2 with Strawberry, Banana, or Grape.
At first I wasn’t too sure of how I would use PB2 with fruit. It is basically powdered peanut butter with dried fruit added. PB2 has minimal sugar so the fruit varieties are not sweet. I think this would be great in oatmeal. You could also mix it with water and use it on a sandwich like regular peanut butter and skip the jelly if you are watching your sugar intake.
Back to my love for fall and apples…I used the Strawberry PB2 to make a guilt-free fruit dip that tastes like a whipped cream cheese. Best part…only 3 ingredients. Strawberry PB2. Greek yogurt. Local honey. Mix it together and you have a healthy, delicious snack.
Don’t get me wrong I love my apples and natural peanut butter. However, this has a lot less fat and between the yogurt and PB2 it is loaded with protein.

If you want to try regular PB2 it is widely available at groceries stores. The fruit variety is just making its way into the market. It is available in some Big Lots stores and is coming to HyVee if those are near you. You can also find it here at Swanson Vitamins.

- 1 cup nonfat plain Greek yogurt
- 3 tbsp PB2 Strawberry
- 1 tbsp honey
- Combine all ingredients in a bowl.
- Mix well.
- Serve immediately or refrigerate until ready to eat.
