As I write this post to you I am in a total panic/state of denial about summer coming to an end. I already have teacher workshops next week! How did that happen?? I like my job, but I like being at home with Rowan WAY better. I thought this year it would be easier to go back to work. I mean…I dropped off a 9 week old baby at daycare and I lived. Now she’s nearly 14 months. I can do it again, right? Wrong! I get sick to my stomach thinking of it. I love our daycare provider but I am going to miss all of the extra time and adventures with her. What a pretty spectacular schedule though…I love that we spent all summer together!
One thing I got to do this summer was visit one of my favorite places near where I grew up. Mixin’ It Up Gluten Free Bakery is a 100% celiac safe bakery in Sauk Rapids, MN. When they opened their bakery all of their equipment was purchased brand new so there is no risk of cross contamination.
As they have grown, they have began to offer a ton more products than the first time I visited. You can read more about that right here. They also offer products that are friendly to other allergens such as dairy or soy.
So…want to know what I tried this time?? Warning…here are a bunch of pictures that are going to make you very hungry!
If you know me, you know that I LOVE pizza so naturally the pizza crust was probably my favorite thing! The crust is gluten and dairy free. I baked mine with cheese because I do not need to avoid dairy. The crust is par-baked so you just top it and bake!
Another favorite was this simple frosted donut. It was soft, cakey, and the icing was a rich chocolate. I could go for about 10 more!
I also tried an amazing eclair, a strawberry banana cupcake, a Boston Cream Pie cupcake, a cinnamon roll, and a scone.
It is so good to see more places like this in areas where gluten free options are still hard to find, especially those that are safe for people with Celiac’s. Mixin’ It Up is run by a family that does not eat gluten and all of their staff are friendly and knowledgeable as well! If you are anywhere near the area message them on their Facebook page because the do offer some delivery options as well. They also have some gluten free classes coming up!
