5 Ingredient Double Chocolate Banana Muffins (made from Beyond the Grain Cake Mix)...and What I Have Been Up To
  • One package Beyond the Grain Gluten Free Chocolate Cake Mix
  • 2 eggs
  • ½ cup milk
  • 1 cup mashed overripe bananas (2-3 bananas)
  • ½ cup semi-sweet or dark chocolate chips
  1. Preheat oven to 350 degrees.
  2. Place liners in a muffin tin (makes 12 muffins).
  3. In a large bowl add cake mix, eggs, milk, and bananas.
  4. Mix using an electric hand mixer on low for about 45-60 seconds, just until everything is combined.
  5. Beat on high for 20-30 more seconds.
  6. Use a spatula to gently stir in chocolate chips.
  7. Spoon the batter into the muffin liners.
  8. Bake for 21-23 minutes.
  9. Remove from oven and let cool in pan for about 5 minutes.
  10. Remove from pan and place muffins on a wire rack to continue cooling.
You can also make this into a loaf of banana bread by pouring into a greased bread pan and baking 45-55 minutes, until a toothpick comes out clean.
