Coconut Cashew Apple Crumble {Gluten Free + Dairy Free}

  • 4 green apples with skin, cut into small cubes
  • 2 tbsp granulated sugar
  • 1 tsp corn starch
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch of sea salt
Crumble Topping
  • ½ cup gluten free rolled oats
  • ½ cup unsweetened coconut flakes
  • ½ cup roasted, lightly salted cashews, chopped
  • ½ cup packed brown sugar
  • ¼ cup melted coconut oil
  1. Preheat oven to 350 degrees.
  2. Grease an 8x8 baking dish with cooking spray.
  3. Cut apples into small cubes, leaving skin on, and add to a mixing bowl.
  4. Add sugar, cornstarch, cinnamon, vanilla, and salt to apples and toss to coat evenly. Set aside.
  5. To a separate bowl, add oats, coconut, cashews, and brown sugar. Use a fork to combine everything.
  6. Melt coconut oil in the microwave. Pour over the coconut cashew mixture and use a fork to mix in evenly.
  7. Stir the apple mixture again and then pour into greased baking dish.
  8. Top the apples with the crumble mixture.
  9. Bake for 35 minutes.
  10. Let stand for at least 10 minutes before cutting into this.
