Quinoa Pizza Muffins {Gluten Free}

Serves: 12 muffins
  • 3 cups cooked quinoa (about 1 cup dry)
  • ½ cup finely chopped green pepper
  • ½ cup finely chopped onion
  • ½ cup finely chopped nitrate free pepperoni (I use Applegate)
  • 1½ cups shredded cheese (mozzarella or a pizza blend)
  • 4 lightly beaten eggs
  • ½ tsp garlic powder
  • 1 tsp dried oregano
  • salt and pepper to taste (I prefer about ½ tsp each)
  • pizza or marinara sauce for dipping
  1. Preheat oven to 400 degrees.
  2. Cook quinoa according to package directions. Let cool.
  3. Stir in diced pepper, onion, pepperoni, and cheese.
  4. Add dried spices.
  5. Lightly beat eggs and stir into the quinoa mixture.
  6. Grease a 12 cup muffin tin with cooking spray.
  7. Divide the quinoa mixture evenly into the muffin tin.
  8. Bake for 20-25 minutes until the edges are turning golden brown.
  9. Let cool for 5 minutes in pan before removing.
  10. Serve with pizza or marinara sauce.
