Cheesy Summer Squash

Cheesy Summer Squash is a slightly decadent way to enjoy this abundant summer vegetable. I buy so many summer squash and zucchini in the summer and always need new ways to cook them. This is a simple, but very tasty way to eat more veggies.

Cheesy Summer Squash
Ingredients
- 1 large summer squash, thinly sliced (or a zucchini if you have that instead)
- 1/2 cup of heavy cream or half and half
- 2 eggs
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup shredded cheese (any variety you like…I actually used a pizza blend because I had it on hand
Directions
- Preheat the oven to 400 degrees
- Slice the squash very thinly
- Coat a pie plate with cooking spray
- Put a layer of summer squash
- Sprinkle on a bit of cheese
- Repeat until you have used all of the squash (you should use about 1/2 of the cheese in the layers and the rest to top)
- Beat 2 eggs into the heavy cream
- Mix in the seasonings
- Pour over the squash
- Top with the rest of the cheese
- Bake for about 1 hour, until top is golden brown
- Let cool slightly before cutting into slices
