10 Minute Toasted Oat Granola (Gluten Free + No Added Sugar or Oil)
FRIDAY! I always love Friday, but I love this Friday even more because I have off of work! To be honest, I am not even sure why…maybe a snow make up day? I know, I know…teachers have a tough life. To be fair, I have been sworn at, grouched at, and given attitude by teenagers all week. As much as I truly do enjoy my work, I am ready for a 3 day weekend.
Oliver has a vet appointment and I have lots to do around the house. It feels a little bittersweet to have off of work and not have plans to go see my grandpa. For the past few years I have always designated these random days off as a time to visit with him. It is just one of those small things that remind you how much you can miss someone. Despite those lingering sad feelings, life is good and I am surrounded by so many wonderful people. On Sunday, Brandon’s family is throwing me a baby shower. I am looking forward to seeing everyone and celebrating our little girl…only about 8 weeks to go! I can’t believe how fast the time has gone.
I have been busy in the kitchen working on new recipes. I am really excited to share this Toasted Oat Granola with you! I LOVE LOVE LOVE granola. I love making homemade granola and there are a ton of brands that you can purchase at the store that are so yummy! I eat granola every single day with yogurt and fruit. It’s kind of my mid-morning snack after breakfast. The only problem with granola is that no matter how many healthy ingredients it contains, it is often packed with sugar and made with oils.
My Toasted Oat Granola is made from pure, clean ingredients with no added oils or sugars. The only sugars in this recipe are the small amounts that naturally occur in the oats, coconut, and walnuts. The best part about not adding sugar or oil is that this granola can be made on the stove top in less than 10 minutes from start to finish. The cinnamon and salt adds enough sweetness and flavor.

- ¾ cup gluten free rolled oats
- ½ cup chopped walnuts
- ½ cup shredded, unsweetened coconut
- ¼ tsp sea salt
- ¼ tsp ground cinnamon
- Heat a large skillet to medium-low.
- Add oats, walnuts, coconut, salt, and cinnamon.
- Stir frequently until oats, walnuts, and coconut are toasted.
- This will take about 5-7 minutes.
- Remove from heat when the coconut is lightly brown.
- Cool and store in an airtight container.
- Serve with yogurt and fresh fruit or any other way your normally enjoy granola.
