Grain Free Peanut Butter Brownie Bars {Gluten Free}

Serves: 9 brownies
  • ¾ cup Creamy Peanut Butter
  • 2 eggs
  • ⅓ cup cocoa powder
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 2 tbsp pure maple syrup
  • 1 cup mashed, overripe banana
  • Optional: 1 tbsp chocolate chips + ½ tsp coconut oil
  1. Preheat oven to 350 degrees.
  2. Add peanut butter, eggs, cocoa powder, coconut flour, baking powder, maple syrup, and banana to a food processor.
  3. Combine on low speed. You will need to scrape the sides one time.
  4. Turn processor on to high speed and let mix for about 45-60 seconds.
  5. Place parchment paper in an 8x8 or 9x9 square baking dish and coat with cooking spray.
  6. Pour the batter into the pan on top of the parchment paper.
  7. Bake for 20-22 minutes.
  8. A toothpick will not come out completely clean.
  9. Let the brownies cool in the pan for at least 10 minutes.
  10. Use parchment paper to remove from the pan and cut into squares.
Chocolate drizzle is not included in nutrition info. If you want to add the chocolate drizzle to these brownies melt 1 tbsp chocolate chips with ½ tsp of coconut oil in the microwave. Microwave in 30 second intervals until smooth. Drizzle over the brownies after they have cooled slightly.
