Spicy Zoodles

  • 3 medium zucchinis, spiralized and squeezed of excess moisture
  • 1 jar Uncle Steve's arrabiata sauce
  1. Spiralize zucchini and lay out on a few layers of paper towels.
  2. Season with salt and let drain while you prepare the sauce.
  3. Add 1 jar of arrabiata sauce to a pan and simmer for 20-30 minutes to reduce, stirring occasionally.
  4. When the sauce is reduced squeeze as much moisture as possible out of the zoodles using a kitchen towel or paper towels.
  5. Use a kitchen scissors to cut the zoodles into shorter pieces.
  6. Add the zoodles to the sauce and toss until coated and zoodles have heated through (about 5 minutes).
