Healthy Oven "Fried" Okra + Creamy Sriracha Dipping Sauce {GF}

  • 1½ cups sliced okra (about 6 small to medium okra)
  • 1 egg, beaten
  • ½ cup cornmeal
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ½ tsp salt
Creamy Sriracha Dip
  • ⅓ cup nonfat plain Greek yogurt
  • 1 tbsp sriracha
  1. Preheat oven to 425 degrees.
  2. Slice okra into ¼ inch pieces.
  3. Combine cornmeal, garlic powder, smoked paprika, salt, and pepper in a bowl or shallow dish.
  4. In a separate bowl, beat the egg.
  5. Dip okra pieces in egg and shake off excess.
  6. Place the egg coated okra into the cornmeal mixture.
  7. Arrange the coated okra into a single layer on a greased baking sheet.
  8. Bake for 17-20 minutes, flipping okra pieces halfway.
  9. While the okra is baking make the dipping sauce by combining yogurt and sriracha.
  10. While okra is still warm sprinkle with a little bit of salt and enjoy immediately.
