Zucchini Peanut Butter Banana Overnight Oats {GF}

Serves: 2 servings
  • 1 cup gf rolled oats
  • ½ cup grated zucchini (drained of excess moisture)
  • 1 medium banana (mashed)
  • ¼ peanut butter powder
  • 1¼ unsweetened vanilla or coconut almond milk
  • 1 tbsp honey
  • 1 tbsp flaxseed meal
  • ¼ tsp ground cinnamon
  1. To prepare the zucchini, grate and squeeze out as much of the liquid as possible with a paper or kitchen towel. Place in a small, microwave safe bowl and cook for 30 seconds.
  2. Add all ingredients to a bowl or storage container and mix until everything is combined.
  3. Refrigerate overnight or a minimum of 4 hours.
  4. Serve as is or top with sliced bananas and natural peanut butter.
