Dark Chocolate Truffles
Serves: 12-15 truffles
  • 8 oz. high quality dark chocolate
  • ½ cup heavy whipping cream
  • 1 tsp pure vanilla extract
  • cocoa powder for dusting
  1. Chop the dark chocolate bars into small pieces. Place into a glass or heat safe bowl and set aside.
  2. Warm heavy whipping cream in a sauce pot until gently simmering. Do not bring to a boil. Remove from heat and pour over the chocolate.
  3. Stir continuously until the chocolate is completely melted and combined with the cream.
  4. Refrigerate for 1-2 hours until firm enough to scoop and roll into balls. I used tablespoon scoop to measure mine but you can use a smaller size if preferred.
  5. Roll the truffles lightly in cocoa powder to coat.
  6. Store in the refrigerator or serve immediately.
