Gluten Free Fall Granola (Pumpkin Seed, Walnut, Flax Blend)

  • 3 cups gluten free old fashioned oats
  • ½ cup raw pumpkin seeds
  • ½ cup raw walnuts, chopped
  • 2 tbsp flax or chia seeds (optional)
  • ¼ cup pure maple syrup
  • ¼ cup no sugar added applesauce
  • 1 tsp cinnamon
  • dash of nutmeg
  • 1 tsp vanilla
  • 1 tbsp brown sugar
  • 2 tbsp canola or coconut oil
  • ¼ to ½ tsp salt (to taste)
  1. Combine nuts, oats, and seeds in a mixing bowl
  2. Combine syrup, applesauce, cinnamon, nutmeg, vanilla, brown sugar, oil, and salt in a small saucepan.
  3. Bring the mixture to a simmer, stirring frequently.
  4. As soon as the mixture starts bubbling, remove from heat and combine with the oat mixture.
  5. Mix well and spread onto a parchment lined baking sheet.
  6. Bake at 300 degrees for 25-35 minutes, until golden brown.
  7. The granola will harden as it cools.
